Black-Eyed Peas Salad

Ingredients:

  • 1 cup black eyes peas, soaked overnight
  • 1/2 red onion, sliced
  • 1 bunch scallion, finely chopped
  • 1/2 bunch of fresh flat leaf parsley, chopped
  • Half pint grape tomato, halved

Method:

  1. Cook soaked beans for half an hour or until soft enough to eat (we like our beans firm but cooked through).
  2. Drain and add to a large serving or mixing bowl.
  3. Add all the other ingredients.
  4. Mix Well.
